joaquin has spent most of his life in the kitchen. his professional experience includes sous chef at Rambutan, chef de cuisine at Ohba, and most recently chef/owner of Brown Bag Lunch Truck. he also spent time as a chef instructor at The Chopping Block. joaquin combines his vast knowledge of flavor and varied techniques to create the unique menu that is smalls. he doesn’t watch any food related television, but does have near encyclopedic knowledge of ’80s tv shows. he sometimes wishes he were a dj/turntablist, and supports Liverpool Football Club, the greatest team in the history of sports. you’ll never walk alone.
